Methods: A gliadin-induced colitis mouse model was established, and cecal contents were collected for untargeted UPLC-MS/MS metabolomic analysis, followed by multivariate statistical screening of differential metabolites. Key findings: Compared with controls, gliadin ingestion profoundly reshaped the cecal metabolomic profile, with marked reductions in bilirubin and its precursor biliverdin.
