The differences in chemical and sensory characteristics between Marselan and Cabernet Sauvignon in China were investigated with gas chromatography-mass spectrometry (GC-MS) and high-performance liquid chromatography-triple quadrupole mass spectrometry (HPLC-QqQ-MS/MS), combined with color parameters and sensory data.
