Meat Quality in Katerini and Podolian Young Bulls Raised on Pasture: A Comparison between Organic Production Systems in Greek and Italian Environments.

ABSTRACT: Local and typical agri-food products (TAP) are receiving increasing interest from consumers, since they are perceived as genuine, healthy and tasty because they are produced under environmentally friendly farming systems. This has aroused a renewed interest among breeders from the inner regions of Italy and Greece toward autochthonous animal populations, such as Greek Katerini and Italian Podolian cattle. Twenty animals were used, divided into two homogeneous groups of ten subjects per each genotype. Animals were fed only on natural pasture and were slaughtered at 18 months of age. Meat from the Katerini young bulls showed a lower a* value, higher moisture and was leaner, and its fat was richer in n-3 fatty acids and had a better n-6/n-3 ratio. Meat from Podolian young bulls was more tender and showed a higher redness value and a significantly greater MUFA concentration. This preliminary study provides a contribution to the local actors and relevant authorities to develop a conservation program for the endangered Katerini breed based on the nutritional and sensorial characterization of its products.

Project description:Understanding the effects of organic pasture management on the soil microbiome is important for sustainable forage production since soil microbiome diversity contributes to improved nutrient cycling, soil structure, plant growth, and environmental resiliency; however, the soil microbiome response to pasture management is largely unknown. This study assessed the soil microbial diversity, richness, and community structure following 10 years of pasture management (organic or non-organic) of the V4 region of the 16S rRNA using the Illumina MiSeq platform. Soil samples were collected from 0-15 cm in July and August from 2017-2018 and soil nutrient properties (nutrients, carbon, nitrogen, and pH) quantified and correlated with soil microbial diversity. Overall, greater soil bacterial species richness (P ≤ 0.05) occurred in organic relative to non-organic (conventional) systems. Management affected bacterial species richness (Chao1), with greater richness occurring in organic pasture soils and less richness occurring in non-organic systems (P ≤ 0.05). Similarly, management affected bacterial evenness (Simpson's index), with a more diverse community occurring in organically managed soils relative to non-organic pastures (P ≤ 0.05). Linear discriminant analysis effect size analysis showed statistically significant and biologically consistent differences in bacterial taxa in organic compared with non-organic soils. Therefore, there was a shift in bacterial community structure in organic relative to non-organic soils (P ≤ 0.05). Additionally, soil nutrients (Fe, Mg, Ni, S, Al, K, Cd, and Cu), pH, C, and N were correlated with one or more dominant bacterial phyla (Gemmatimonadetes, Planctomycetes, Firmicutes, Chloroflexi, Actinobacteria, and Acidobacteria). Overall, pasture management affected soil microbial diversity, with greater diversity occurring in organic than non-organic systems, likely owing to applications of organic poultry litter in organic systems compared to non-organic management (use of inorganic-fertilizers and herbicides). Results indicate that when pastures are converted to organic production systems, soil microbial richness and diversity may increase, thereby resulting in enhanced soil microbiome diversity and overall ecosystem services.

Project description:BackgroundThe potential to distribute bacteria resistant to antimicrobial drugs in the meat supply is a public health concern. Market cows make up a fifth of the U.S. beef produced but little is known about the entire population of bacteria (the microbiome) and entirety of all resistance genes (the resistome) that are found in this population. The objective of this study was to characterize and compare the resistomes and microbiome of beef, dairy, and organic dairy market cows at slaughter.MethodsFifty-four (N = 54) composite samples of both colon content and meat trimmings rinsate samples were collected over six visits to two harvest facilities from cows raised in three different production systems: conventional beef, conventional dairy, and organic dairy (n = 3 samples per visit per production system). Metagenomic DNA obtained from samples were analyzed using target-enriched sequencing (resistome) and 16S rRNA gene sequencing (microbiome).ResultsAll colon content samples had at least one identifiable antimicrobial resistance gene (ARG), while 21 of the 54 meat trimmings samples harbored at least one identifiable ARGs. Tetracycline ARGs were the most abundant class in both colon content and carcass meat trimmings. The resistome found on carcass meat trimmings was not significantly different by production system (P = 0.84, R2 = 0.00) or harvest facility (P = 0.10, R2 = 0.09). However, the resistome of colon content differed (P = 0.01; R2 = 0.05) among production systems, but not among the harvest facilities (P = 0.41; R2 = 0.00). Amplicon sequencing revealed differences (P < 0.05) in microbial populations in both meat trimmings and colon content between harvest facilities but not production systems (P > 0.05).ConclusionsThese data provide a baseline characterization of an important segment of the beef industry and highlight the effect that the production system where cattle are raised and the harvest facilities where an animal is processed can impact associated microbiome and resistomes.

Project description:This study aimed to evaluate the greenhouse gas (GHG) emission and net protein contribution (NPC) of Nellore young bulls grazing marandu palisade grass (Urochloa brizantha cv. Marandu) under three levels of pasture nitrogen (N) fertilization during backgrounding and finished on pasture or feedlot, based on concepts of sustainable intensification. The treatments were: System 1: pastures without N fertilizer during backgrounding, and animals finished on pasture supplemented with high concentrate at a rate of (20 g of concentrate per kg of body weight; P0N + PS); System 2: pastures fertilized with 75 kg N ha-1 year-1 during backgrounding and animals finished on feedlot fed a total mixed ration (TMR; P75N + F); and System 3: pastures fertilized with 150 kg N ha-1 year-1 during backgrounding, and animals finished on feedlot fed a TMR (P150N + F). During backgrounding, all pastures were managed under a continuous and put-and-take stock grazing system. All animals were supplemented with only human-inedible feed. Primary data from systems 1, 2 and 3, respectively, in the field experiment were used to model GHG emissions and NPC (a feed-food competitiveness index), considering the backgrounding and finishing phases of the beef cattle production system. Average daily gain (ADG) was 33% greater for the N fertilizer pastures, while carcass production and stocking rate (SR) more than doubled (P75N + F and P150N + F). Otherwise, the lowest GHG emission intensity (kg CO2e kg carcass-1) was from the P0N + PS system (without N fertilizer) but did not differ from the P75N + F system (p > 0.05; pastures with 75 kg N ha-1). The main source of GHG emission in all production systems was from enteric methane. Moreover, NPC was above 1 for all production systems, indicating that intensified systems contributed positively to supply human protein requirements. Moderate N fertilization of pastures increased the SR twofold without increasing greenhouse gas emissions intensity. Furthermore, tropical beef production systems are net contributors to the human protein supply without competing for food, playing a pivotal role in the food security agenda.
