Properties of Active Levan-Bitter Vetch Protein Films for Potential Use in Food Packaging Applications.

ABSTRACT: ζ-potential and Z-average were determined on film-forming solutions of bitter vetch-levan-based films prepared at different ratios in the absence and presence of glycerol as a plasticizer. The casting method was used to obtain manageable films. The results revealed that levan increases the elongation at break of bitter vetch protein films and reduces the tensile strength. The optimal result was obtained through the film that was prepared with the ratio of 50% bitter vetch proteins and 50% levan, in terms of mechanical properties. The surfaces of the prepared films appeared to be more compact and smooth. On increasing the glycerol concentration in the bitter vetch protein-levan films, the oxygen and water vapor permeability increased compared to the control (P < 0.05). Based on the overall results, the reinforcement of bitter vetch proteins with levan at a ratio of 1:1 represents optimal film properties in the presence of a low concentration of glycerol. The proposed film is suggested as an innovative packaging system for beef meat to preserve its quality over time.

Project description:Microbial contamination and the need for sustainable food production are driving the shift toward biodegradable food packaging materials. There is an urgent need to develop smart food packaging materials that can prevent contamination and prolong the shelf life of meat. To achieve this, the physical-chemical characteristics of polyvinyl alcohol (PVA)-based packaging films were enhanced through incorporation of lactic acid and anthocyanins to act as a pH indicator. The mechanical, hydrophilic, barrier, and antibacterial properties of the composite films were then evaluated to test the ability of the film to act as a packaging material. In addition, the surface morphology was studied by scanning electron microscopy (SEM), the functional groups by Fourier transform infrared (FTIR) spectroscopy, optical transparency using ultraviolet-visible (UV-vis) spectrophotometer, crystallinity by powder diffraction, and their thermal properties by thermal gravimetric analysis (TGA). The films had a swelling degree (SD) of 222.60 ± 21.19%, dry content (DC) of 70.56 ± 2.54%, moisture content (MC) of 29.44 ± 2%, ALRO moisture (AM) content of 41.85 ± 5.06, and total soluble matter (TSM) of 8.05 ± 1.05%. Moreover, incorporation of lactic acid enhanced the mechanical and the thermal properties of the films but it reduced their optical transparency. The water vapor permeability (WVP) was found to be 14.32 × 10-3 g-1 s-1 Pa-1 and it inhibited the growth of Escherichia coli (EC) (10.67 ± 0.58 cm), Staphylococcus aureus (SA) (10.50 ± 0.40 cm), Pseudomonas aeruginosa (PA) (10.33 ± 0.58 cm), and Staphylococcus epidermidis (11 ± 1 cm) but not Bacillus subtilis (BS). The film's hue changed from red to green over time when used as a packaging material for meat under ambient condition indicating a deterioration in freshness. In conclusion, the developed packaging film exhibited enhanced mechanical, antimicrobial, and hydrophilic properties and it can be used to store and relay information when stored meat begins to decompose through a visible color change of the films.

Project description:Fully biobased and biodegradable materials have attracted a growing interest in the food packaging sector as they can help to reduce the negative impact of fossil-based plastics on the environment. Moreover, the addition of functionalities to these materials by introducing active molecules has become an essential requirement to create modern packaging able to extend food's shelf-life while informing the consumer about food quality and freshness. In this study, we present an innovative bioplastic formulation for food packaging based on poly(hydroxybutyrate-co-valerate) (PHBV) and tannins as multifunctional additives. As a proof of concept, PHBV/tannin films were prepared by solvent casting, increasing the tannin content from 1 to 10 per hundred of resin (phr). Formic acid was used to reach a homogeneous distribution of the hydrophilic tannins into hydrophobic PHBV, which is remarkably challenging by using other solvents. Thanks to their well-known properties, the effect of tannins on the antioxidant, UV protection, and gas barrier properties of PHBV was evaluated. Samples containing 5 phr bioadditive revealed the best combination of these properties, also maintaining good transparency. Differential scanning calorimetry (DSC) investigations revealed that films are suitable for application from the fridge to potentially high temperatures for food heating (up to 200 °C). Tensile tests have also shown that Young's modulus (900-1030 MPa) and tensile strength (20 MPa) are comparable with those of the common polymers and biopolymers for packaging. Besides the improvement of the PHBV properties for extending food's shelf-life, it was also observed that PHBV/tannin could colorimetrically detect ammonia vapors, thus making this material potentially applicable as a smart indicator for food spoilage (e.g., detection of fish degradation). The presented outcomes suggest that tannins can add multifunctional properties to a polymeric material, opening up a new strategy to obtain an attractive alternative to petroleum-based plastics for smart food packaging applications.
