No proprietary starter cultures for crafting Chinese bacon. This study aimed to isolate Coagulase-negative <i>Staphylococci</i> (CNS) from Chinese bacon, identify their species, and evaluate their ability to produce biogenic amines (BAs), peptides, free amino acids (FAAs), and degrade proteins.
