Project description:Developing food supply chains in the African agriculture could be one of the keys for higher value-added activities and for the fair income of the stakeholders along the chains. Our research aims to investigate how these agricultural value chains are working in Northern Ghana and how to develop them. To estimate meat demand in the Tamale Metropolis, we carried out a large-scale survey with more than 300 interviews. Furthermore, we also measured the awareness of processed meat products. Based on the results, our conclusions are as follows: Development of public services offers the opportunity to (1) gaining market power for ourselves while losing market power for others, (2) indirect takeover of control on political and civil societies while losing control for others, (3) to win allies and friends on one hand, potentially losing allies and friends on the other. After spatial analyses of grazing areas, animal markets, trading routes and witnessing the descriptions of basic macroeconomic differences within Ghana; we must conclude that live animal trade is south-orientated, where traders are able to bargain higher prices. Due to northern locational advantages, the price of animals could be reduced. The presumably cheaper workforce and dozens of unemployed young males could also alleviate the financial burdens.

Project description:Though the international trade in agricultural commodities is worth more than $1.6 trillion/year, we still have a poor understanding of the supply chains connecting places of production and consumption and the socioeconomic and environmental impacts of this trade. In this study, we provide a wall-to-wall subnational map of the origin and supply chain of Brazilian meat, offal, and live cattle exports from 2015 to 2017, a trade worth more than $5.4 billion/year. Brazil is the world's largest beef exporter, exporting approximately one-fifth of its production, and the sector has a notable environmental footprint, linked to one-fifth of all commodity-driven deforestation across the tropics. By combining official per-shipment trade records, slaughterhouse export licenses, subnational agricultural statistics, and data on the origin of cattle per slaughterhouse, we mapped the flow of cattle from more than 2,800 municipalities where cattle were raised to 152 exporting slaughterhouses where they were slaughtered, via the 204 exporting and 3,383 importing companies handling that trade, and finally to 152 importing countries. We find stark differences in the subnational origin of the sourcing of different actors and link this supply chain mapping to spatially explicit data on cattle-associated deforestation, to estimate the "deforestation risk" (in hectares/year) of each supply chain actor over time. Our results provide an unprecedented insight into the global trade of a deforestation-risk commodity and demonstrate the potential for improved supply chain transparency based on currently available data.

Project description:There is consumer pressure on the US beef cattle industry to minimize antibiotic use (ABU) in order to aid in the global antimicrobial resistance mitigation efforts. Our objective was to estimate the economic costs of ABU constraints in a conceptual US integrated beef supply chain (IBSC) to aid the beef industry in mitigating the ever-increasing risk of antimicrobial resistance, by reducing their ABU. An IBSC network model was developed and differentiated into 37 different nodes of production. Each node could only raise a specific type of animals, differentiated based on the production technique and animal health status. The cost, as well as the weight gain coefficient, was estimated for each node, using an IBSC cost of production model. Linear programming solutions to this network model provided the least cost path of beef supply through the system, under various ABU constraints. The cost as well as weight gain coefficient of the 37 nodes, initial supply of 28.5 million calves weighing 0.65 million metric tons, and final demand of 16.14 million metric tons of slaughter-ready fed cattle were used as inputs/constraints to the three different linear programming scenarios, with different ABU constraints. Our first scenario, which placed no constraint on ABU, estimated that the minimum total economic cost to meet the final beef demand was $38.6 billion. The optimal solution was to use only the high health status calves for beef production. Because low health calves occur in the beef system, our second scenario required all the calves irrespective of their health status to be used, which increased the system cost to $41.5 billion. Thus, the value of only producing high health status calves is $2.9 billion. Our third scenario, which restricted feedlots from using antibiotics even for low health calves, incurred a total cost of $41.9 billion for antibiotic-free beef production. We concluded that the additional cost of $367 million for implementing antibiotic-free beef production is relatively low, ~0.90% of the minimum cost incurred for the conventional beef supply chain (model 2 cost of $41.5 billion). However, a much higher cost savings is obtained by producing only high health status calves.

Project description:With the COVID-19 pandemic, supply chains are today confronted with more uncertainties than ever before. In the face of unanticipated disruptions, being resilient and sustainable has been rewarding for supply chains in terms of competitive advantage. However, literature is still far from possessing an encompassing sustainable supply chain framework (SSCF). As a contribution to the extant literature, the present study expounds a prominent concept termed negative entropy and explores its role in the SSCF. To accomplish this goal, the effect of negative entropy on supply chain sustainability is tested. Following the open systems theory and drawing from the collaboration and information management aspects of the negative entropy, co-creation, open innovation and network governance concepts which are considered to be relevant in this context are selected to be the antecedents of negative entropy. The empirical research is conducted on prominent logistics service providers and firms from various sectors with approved research and development departments in Turkey. The obtained data were subjected to covariance-based structural equation modeling analysis via Lisrel program. According to results, negative entropy is found to be a robust element in explaining supply chain sustainability. Furthermore, whereas co-creation and network governance reflected significant effects on negative entropy, surprisingly, open innovation demonstrated no substantial impact. This paper opens up a new front in sustainable supply chain management studies with a notable empirical study introducing negative entropy in the context of open systems theory.

Project description:Meat production is an essential component in food security and the economy in Uganda. However, food safety concerns pose a challenge to public health in Uganda and impede access to regional and global markets. Here, food safety management (FSM) practices in the Ugandan beef supply chain were evaluated. A cross-sectional survey was conducted in major slaughterhouses (n = 3), butcher shops (n = 184), and supermarkets (n = 25) in Uganda's capital, Kampala. The three slaughterhouses had low scores in core control and assurance activities of FSM. Packaging interventions were weak in all the slaughterhouses, while only one slaughterhouse had a functional cooling facility. Supermarkets implemented better hygienic and preventative practices in comparison to butcher shops. However, both sourced from slaughterhouses that had low-to-poor hygiene practices, which weakened the efforts implemented in the supermarkets. Furthermore, most butcher shops did not offer training to meat handlers on HACCP (Hazard Analysis and Critical Control Point)-based practices. The low food safety performance in the supply chain was primarily attributed to poor sanitation, hygiene, and handling practices. Therefore, HACCP-based training and robust preventive, intervention, and monitoring systems are needed in the Ugandan beef supply chain to benefit public health and increase competitiveness.

Project description:Snacking has been traditionally associated with consumption of carbohydrates- and fats-rich foods. Nevertheless, new dietary trends have modified the social perception and outcomes of this dietary habit promoting consumption of protein-rich foods. This study investigates the impact of food processing on the proteome of one of the most widely consumed meat snacks, beef jerky. We have performed discovery-driven proteome-wide analyses, which encountered a significantly elevated presence of reactive prooxidant post-translational modifications in jerky compared to unprocessed meat.

Project description:The purpose of this study was to determine whether raw milk, unpasteurized dairy products, pork, and beef available for sale in the Kujawsko-Pomorskie and Wielkopolska regions in Poland are contaminated with Campylobacter spp. bacteria and may be a potential source of infection. For isolated strains, antibiotic susceptibility and the presence of genes responsible for virulence were examined. Material for research included 1058 food samples collected between 2014 and 2018 with 454 samples of raw milk and unpasteurized dairy products (milk from vending machines, milk from owners of dairy cows, cheese, milk cream) and 604 samples of raw meat (pork, beef). The results indicated that 9.3% of the samples were positive for Campylobacter spp., and Campylobacterjejuni was predominant in this study. Campylobacter bacteria was not found in milk collected from vending machines, as well as cheese and milk cream samples. Campylobacter was noted in 12.7% of beef samples, 11.8% of raw milk purchased from individual suppliers, and 10.9% of pork samples. Resistance to erythromycin (2.0%), azithromycin (3.1%), gentamicin (4.1%), tetracycline (65.3%), and ciprofloxacin (71.4%) was determined using the disc diffusion method. Furthermore, the prevalence of racR, sodB, csrA, virB11, cdtB, iam, and wlaN genes were examined using the PCR method. The sodB, csrA, and cdtB genes exhibited the highest detection rate, but none of the genes were identified in 100% of the isolates. Statistically significant differences between the presence of virulence marker genes, including for iam, racR, and csrA markers, were noted among different sources of the isolates. Differences in the distribution of iam,wlaN, and virB11 were also shown between C. jejuni and C. coli strains. As a result of the analysis, it has been concluded that unpasteurized milk, beef, and pork could be a sources of Campylobacter pathogens. Moreover, this study revealed virulent properties of Campylobacter isolated from such food products and high resistance rates to fluoroquinolones, which may represent difficulties in campylobacteriosis treatment.
