Metabolomics analysis to elucidate the mechanisms underlying the accumulation of phenolic compounds in fresh-cut red cabbages under ultrasonic stress.

ABSTRACT: Ultrasonic washing, as a form of abiotic stress, has been proven to trigger the biosynthesis of phenolic compounds (PCs) in fresh-cut red cabbages (FRCs). However, the related regulatory mechanisms remain unclear. This study preliminarily evaluated the enrichment mechanisms of PCs in FRCs under ultrasonic stress using a combination of untargeted and targeted metabolomics. The untargeted metabolomics analysis found that a total of 969 metabolites were identified in FRCs, including 33 and 16 differentially expressed metabolites (DEMs) in the two comparison groups at early storage (Day 2) and late storage (Day 6), respectively. KEGG enrichment analysis indicated that ultrasound treatment significantly upregulated pathways related to signal transduction, carbohydrate metabolism, amino acid met
