Multimatrix Detection and Quantification of the Advanced Glycation End Products Precursor Fructoselysine via UHPLC-HRMS/MS.

ABSTRACT: Background: Advanced glycation end products (AGEs) play a pivotal role in various human pathologies, including aging and metabolic diseases, and their formation may have significant physiological consequences for human health. Fructoselysine (FL) is an intermediate in the formation of AGEs, and its accumulation has been associated with detrimental health effects. Although several chromatographic methods have been developed for AGEs detection and quantification, no mass spectrometry-based approach has previously been established to quantify FL in different human biological matrices. Methods: In this study, we present a novel UHPLC-HRMS/MS method for the identification and quantification of this compound in various biological matrices, including plasma, feces, and urine. Res
