High molecular weight glutenin subunits (HMWGS) are responsible for dough elasticity and bread making quality of bread wheat. Related wild non-progenitor species, <i>Aegilops kotschyi</i> possesses higher molecular weight <i>x</i> and <i>y</i> glutenin subunits than the bread wheat cultivars.
