Ochratoxin A (OTA) produced by mycotoxigenic fungi (<i>Aspergillus</i> and <i>Penicillium</i> spp.) is an extremely toxic and carcinogenic metabolite. The use of cold plasma to inhibit toxin-producing microorganisms in coffee could be an important alternative to avoid proliferation of mycotoxigenic fungi.
