Here, we explored the influences of thyme microcapsules on the growth, gene expression, and histamine accumulation by <i>Proteus bacillus</i> isolated from smoked horsemeat sausage. RT-qPCR was employed to evaluate the gene expression level of histidine decarboxylase (HDC) cascade-associated genes.
