Chinese fermented mandarin fish (<i>Siniperca chuatsi</i>) have unique aroma characteristics that are appreciated by local consumers. In this study, electronic nose (E-nose) and gas chromatography-ion mobility spectrometry analyses were combined to establish a volatile fingerprint of fermented mandarin fish during fermentation.
