Vinegar Volatile Organic Compounds: Analytical Methods, Constituents, and Formation Processes.

ABSTRACT: Vinegar is an acid condiment shared all over the world. According to the raw materials, vinegar can be mainly divided into fruit and cereal ones, both of which possess unique aroma and flavor characteristics and corresponding volatile organic compounds (VOCs). Many studies about vinegar VOCs' (VVOCs) sorts, analytical methods, and forming mechanisms have been done. In this review, the main categories of vinegar and their distribution in the world are briefly introduced, then VVOCs' analytical and identified methods, types, and forming processes are summarized. Additionally, the VVOCs' research directions are discussed and prospected. According to the searched literatures, this study is the first to systematically review the analytical methods, sorts, and formation mechanisms of VVOCs, which will make the readers better understand the vinegar's aromas and flavors and their producing mechanisms.

Simulation and Non-Invasive Testing of Vinegar Storage Time by Olfaction Visualization System and Volatile Organic Compounds Analysis.

Project description:An olfactory visualization system conducts a qualitative or quantitative analysis of volatile organic compounds (VOCs) by utilizing the sensor array made of color sensitive dyes. The reaction chamber is important to the sensor array's sufficient and even exposure to VOCs. In the current work, a reaction chamber with an arc baffle embedded in the front of the air inlet for drainage effect was designed. The velocity of field and particle distribution of flow field in the reaction chamber was simulated by COMSOL Multiphysics. Through repeated simulation, the chamber achieved optimal result when the baffle curvature was 3.1 and the vertical distance between the baffle front end and the air inlet was 1.6 cm. Under the new reaction chamber, principal component analysis (PCA) and linear discriminant analysis (LDA) were employed to identify vinegar samples with different storage time through analyzing their VOCs. The LDA model achieved optimal performance when 8 principal components (PCs) were used, and the recognition rate was 95% in both training and prediction sets. The new reaction chamber could improve the stability and precision of an olfactory visualization system for VOCs analysis, and achieve the accurate differentiation and rapid discrimination of Zhenjiang vinegar with different storage time.

Project description:Volatile organic compounds (VOCs) are low molecular weight (<1 kDa) compounds which represent the final products of cell metabolism. Their composition can be affected by several factors including diet, hormones, environment and the presence of diseases, in particular, cancer. Colorectal cancer (CRC) is one of the commonest tumours and is an important cause of cancer-related mortality. The expression of VOCs in breath that are linked to a patient’s disease state could offers a powerful, non-invasive approach to identifying CRC patients.

Secondary Organic Aerosol Formation during the Oxidation of Large Aromatic and Other Cyclic Anthropogenic Volatile Organic Compounds.

Project description:The secondary organic aerosol (SOA) production from the reactions of anthropogenic large volatile (VOCs) and intermediate volatility organic compounds (IVOCs) with hydroxyl radicals under high NO x conditions was investigated. The organic compounds studied include cyclic alkanes of increasing size (amylcyclohexane, hexylcyclohexane, nonylcyclohexane, and decylcyclohexane) and aromatic compounds (1,3,5-trimethylbenzene, 1,3,5-triethylbenzene and 1,3,5-tritert-butylbenzene). A considerable amount of SOA was formed from all examined compounds. For the studied cyclohexanes (C11-C16) there appears that the SOA yield depends nonlinearly on the length of their substitute chain. The large cyclohexanes had higher yields than the aromatic compounds, but the aromatic precursors produced a more oxidized SOA. This was due to the production of lower volatility and O:C first generation products by the cyclohexanes. Most oxidation products (with C* < 104 μg m-3) in the case of cyclohexanes are SVOCs (∼50%), while of aromatics are IVOCs (∼60%). Structure, molecular size, and length of the substitute chain of the parent hydrocarbon were found to play key roles in SOA formation, oxidation state, and volatility. The SOA volatility distribution, effective vaporization enthalpy, and effective accommodation coefficient were also quantified by combining SOA yields, thermodenuder (TD) and isothermal dilution measurements. Parameterizations for the Volatility Basis Set (VBS) are proposed for future use in chemical transport models.

Trichoderma spp. volatile organic compounds protect grapevine plants by activating defense-related processes against downy mildew.

Project description:Volatile organic compounds (VOCs) are produced by soil-borne microorganisms and play crucial roles in fungal interactions with plants and phytopathogens. Although VOCs have been characterized in Trichoderma spp., the mechanisms against phytopathogens strongly differ according to the strain and pathosystem. This study aimed at characterizing VOCs produced by three Trichoderma strains used as biofungicides and to investigate their effects against grapevine downy mildew (caused by Plasmopara viticola). A VOC-mediated reduction of downy mildew severity was found in leaf disks treated with Trichoderma asperellum T34 (T34), T. harzianum T39 (T39), and T. atroviride SC1 (SC1) and 31 compounds were detected by head space-solid phase microextraction gas chromatography-mass spectrometry. Among the Trichoderma VOCs annotated, α-farnesene, cadinene, 1,3-octadiene, 2-pentylfuran, and 6-pentyl-2H-pyran-2-one reduced downy mildew severity on grapevine leaf disks. In particular, 6-pentyl-2H-pyran-2-one and 2-pentylfuran increased the accumulation of callose and enhanced the modulation of defense-related genes after P. viticola inoculation, indicating an induction of grapevine defense mechanisms. Moreover, 6-pentyl-2H-pyran-2-one activated the hypersensitive response after P. viticola inoculation, possibly to reinforce the grapevine defense reaction. These results indicate that Trichoderma VOCs can induce grapevine resistance, and these molecules could be further applied to control grapevine downy mildew.

Comparison of sampling methods for the determination of volatile organic compounds in consumer aerosol sprays.

Project description:Many studies have evaluated the hazardous substances contained in various household chemical products. However, for aerosol spray products there is currently no international standard sampling method for use in a component analysis. The aim of this study was to develop an appropriate sampling method for the analysis of volatile organic compounds (VOCs) in consumer aerosol sprays. Two different sampling methods, spraying (into a vial) and perforating (and transferring the contents into a vial), were used to evaluate the levels of 16 VOC components in eight different aerosol spray products. All eight products contained trace amounts of hazardous VOCs, and a quantitative analysis showed that, for the same product, VOC concentrations were higher when spraying than when perforating. Using the spraying method, average toluene, ethylbenzene, p-xylene, o-xylene, and styrene concentrations were 1.80-, 2.10- 2.25-, 2.03-fold, and 1.28-fold higher, respectively, than when using the perforating method. The spraying method may provide more realistic estimates of the user's exposure to harmful substances and the associated health risks when using spray products. Of the two representative methods widely used to analyze harmful substances in consumer aerosol sprays, the spraying method is recommended over the perforating method for the analysis of VOCs.

Exhaled volatile organic compounds for cholangiocarcinoma diagnosis.

Project description:ObjectivesThe difficulties in the early detection consequent to the lack of sensitive biomarkers render patients with cholangiocarcinoma (CCA) to have poor outcomes. Recently, sensitive and specific volatile organic compounds (VOCs) were identified in several cancers. However, the VOC profiles in CCA are not well-studied. Thus, we investigated the VOC profiles in exhaled breath of CCA patients and controls.MethodsWe prospectively collected exhaled breath samples from 30 consecutive patients newly diagnosed with CCA and 30 controls who did not have CCA (seven had benign biliary strictures and 23 had other medical conditions). Exhaled VOCs were identified using gas chromatography mass spectrometry Triple Quadrupoles system. Analysis of the significant differences in VOCs between cases and controls was conducted using supervised multivariate regression analysis. Further validation was performed for these VOCs in another cohort of 18 CCA patients and 22 controls.ResultsLevels of six compounds were significantly different between CCA patients and controls, namely, acetone, isopropyl alcohol, dimethyl sulfide, 1,4-pentadiene, allyl methyl sulfide, and N,N-dimethylacetamide. Acetone and dimethyl sulfide were independently associated with CCA as demonstrated in the multivariate analysis. Using the cut-off value of 8.59 × 107 arbitrary unit (AU), acetone had a sensitivity and specificity of 82.1% and 75.8%, respectively, with an area under the receiving operator curve (AUROC) of 0.85 for the CCA diagnosis. Acetone level was also significantly different between cases and controls in the validation cohort. Using the same cut-off value, the sensitivity, specificity, and AUROC was 59.1%, 66.7%, and 0.85, respectively.ConclusionBreath analysis may potentially be useful for CCA diagnosis. A cohort of patients with early-stage CCA in further studies is needed to confirm the ability of exhaled VOCs for the early detection of CCA.

Indoor Emission, Oxidation, and New Particle Formation of Personal Care Product Related Volatile Organic Compounds.

Project description:Personal care products (PCPs) contain diverse volatile organic compounds (VOCs) and routine use of PCPs indoors has important implications for indoor air quality and human chemical exposures. This chamber study deployed aerosol instrumentation and two online mass spectrometers to quantify VOC emissions from the indoor use of five fragranced PCPs and examined the formation of gas-phase oxidation products and particles upon ozone-initiated oxidation of reactive VOCs. The tested PCPs include a perfume, a roll-on deodorant, a body spray, a hair spray, and a hand lotion. Indoor use of these PCPs emitted over 200 VOCs and resulted in indoor VOC mixing ratios of several parts per million. The VOC emission factors for the PCPs varied from 2 to 964 mg g-1. We identified strong emissions of terpenes and their derivatives, which are likely used as fragrant additives in the PCPs. When using the PCPs in the presence of indoor ozone, these reactive VOCs underwent oxidation reactions to form a variety of gas-phase oxidized vapors and led to rapid new particle formation (NPF) events with particle growth rates up to ten times higher than outdoor atmospheric NPF events. The resulting ultrafine particle concentrations reach ∼34000 to ∼200000 cm-3 during the NPF events.

Microchamber Extraction and Analytical Pyrolysis to Explore Volatile Organic Compounds from Compression-Cooking Wood Materials Obtained under Different Conditions.

Project description:Volatile organic compounds are species of concern for indoor air quality. They are emitted from a wide range of indoor sources and in particular from construction materials. Industrialized wood-based panels made from various types of wood bonded with thermosetting adhesive resins have been shown to emit volatile organic compounds over months or even years mostly due to the petrochemical binders. Some studies have been conducted on binderless panels, but they mainly focused on the pressing parameters to be applied to optimize the panel characteristics. The aim of this research is to document the emissions from binderless panels and to access the volatile composition of wood processing through the molding of materials. For this purpose, binderless boards were manufactured from hardwoods, known to emit less than softwoods with different thermopressing temperatures and times. Emissions were studied by placing the materials in microchambers. Volatile organic compounds were then sampled and analyzed by various chromatographic methods. On the other hand, materials were pyrolyzed and then analyzed by gas chromatography and mass spectrometry. The implemented protocols proved suitable for the determination of more than 40 organic compounds, among which are aldehydes, aromatics, furans and derivatives, and carboxylic acids.

Aiming to understand the molecular mechanisms of these interactions, we evaluated the transcriptomic response of T. ethacetica to the mVOCs produced by one of these bacterial isolates.
