Does Carbon Footprint Play a Relevant Role in Food Consumer Behaviour? A Focus on Spanish Beef.

ABSTRACT: Carbon footprint has become a reference indicator of the environmental impact of food production. Governments are increasingly demanding a trend towards low-carbon-footprint production in order to reduce the impact on climate change. In this sense, the study of consumers' preferences and assessment of products from the perspective of their carbon footprint is crucial to achieve a green and circular economy. This paper specifically attempted to assess consumer preference and willingness to pay for beef that has been carbon-footprint-labelled as an attribute. In order to attain this objective, a choice experiment was designed and applied to a total of 362 Spanish consumers. The results revealed a positive preference towards beef produced in low-carbon-footprint systems. In addition, the segmentation of these consumers revealed the existence of a group of consumers who prioritise environmental impact over product price.

Carbon opportunity cost increases carbon footprint advantage of grain-finished beef.

Project description:Beef production accounts for the largest share of global livestock greenhouse gas emissions and is an important target for climate mitigation efforts. Most life-cycle assessments comparing the carbon footprint of beef production systems have been limited to production emissions. None also consider potential carbon sequestration due to grazing and alternate uses of land used for production. We assess the carbon footprint of 100 beef production systems in 16 countries, including production emissions, soil carbon sequestration from grazing, and carbon opportunity cost-the potential carbon sequestration that could occur on land if it were not used for production. We conduct a pairwise comparison of pasture-finished operations in which cattle almost exclusively consume grasses and forage, and grain-finished operations in which cattle are first grazed and then fed a grain-based diet. We find that pasture-finished operations have 20% higher production emissions and 42% higher carbon footprint than grain-finished systems. We also find that more land-intensive operations generally have higher carbon footprints. Regression analysis indicates that a 10% increase in land-use intensity is associated with a 4.8% increase in production emissions, but a 9.0% increase in carbon footprint, including production emissions, soil carbon sequestration and carbon opportunity cost. The carbon opportunity cost of operations was, on average, 130% larger than production emissions. These results point to the importance of accounting for carbon opportunity cost in assessing the sustainability of beef production systems and developing climate mitigation strategies.

Tackling Food Waste: Impact of German Consumer Behaviour on Food in Chilled Storage.

Project description:Since perishable food in private households is usually stored in refrigerators, both consumer knowledge of correct storage parameters and food handling have a major impact on food quality retention. Today's refrigerators provide features, such as climate-controlled compartments, to improve chilled storage performance, but former studies have shown a lack of usage and interest in such features. This paper is based on the results of an online survey with 2666 respondents from Germany. The questionnaire focused on consumer behaviour regarding the chilled storage of perishable foods, the perception of quality loss in food and consumer requirements concerning refrigerators. The novelty in the study layout was the focus on seven common refrigerator storage features. The results showed that consumers had a high awareness of food safety, resulting in short storage durations. While it was clearly indicated that the storage features were less well-known, their importance correlated with rates of food waste, underlining the potential for improvement. The survey implied that raising the awareness of storage climate parameters is a tool for nudging consumers into lower rates of food waste.

A multilevel carbon and water footprint dataset of food commodities.

Project description:Informing and engaging citizens to adopt sustainable diets is a key strategy for reducing global environmental impacts of the agricultural and food sectors. In this respect, the first requisite to support citizens and actors of the food sector is to provide them a publicly available, reliable and ready to use synthesis of environmental pressures associated to food commodities. Here we introduce the SU-EATABLE LIFE database, a multilevel database of carbon (CF) and water (WF) footprint values of food commodities, based on a standardized methodology to extract information and assign optimal footprint values and uncertainties to food items, starting from peer-reviewed articles and grey literature. The database and its innovative methodological framework for uncertainty treatment and data quality assurance provides a solid basis for evaluating the impact of dietary shifts on global environmental policies, including climate mitigation through greenhouse gas emission reductions. The database ensures repeatability and further expansion, providing a reliable science-based tool for managers and researcher in the food sector.

Low Carbon Footprint Recycling of Post-Consumer PET Plastic with a Metagenomic Polyester Hydrolase.

Project description:Earth is flooded with plastics and the need for sustainable recycling strategies for polymers has become increasingly urgent. Enzyme-based hydrolysis of post-consumer plastic is an emerging strategy for closed-loop recycling of polyethylene terephthalate (PET). The polyester hydrolase PHL7, isolated from a compost metagenome, completely hydrolyzes amorphous PET films, releasing 91 mg of terephthalic acid per hour and mg of enzyme. Vertical scanning interferometry shows degradation rates of the PET film of 6.8 μm h-1 . Structural analysis indicates the importance of leucine at position 210 for the extraordinarily high PET-hydrolyzing activity of PHL7. Within 24 h, 0.6 mgenzyme gPET -1 completely degrades post-consumer thermoform PET packaging in an aqueous buffer at 70 °C without any energy-intensive pretreatments. Terephthalic acid recovered from the enzymatic hydrolysate is then used to synthesize virgin PET, demonstrating the potential of polyester hydrolases as catalysts in sustainable PET recycling processes with a low carbon footprint.

Global Transcriptomics Reveals Carbon Footprint of Food Waste in the Bioconversion of Ecofriendly Polymers

Project description:Food waste is a major source of environmental pollution, as its landfills attribute to greenhouse gas emissions. This study developed a robust upcycling bioprocess that converts food waste into lactic acid through autochthonous fermentation and further produces biodegradable polymer polyhydroxybutyrate (PHB). Food can be stored without affecting its bioconversion to lactic acid, making it feasible for industrial application. Mapping autochthonous microbiota in the food waste fermentation before and after storage revealed lactic-acid-producing microorganisms dominate during the indigenous fermentation. Furthermore, through global transcriptomic and gene set enrichment analyses, it was discovered that coupling lactic acid as carbon source with ammonium sulfate as nitrogen source in Cupriavidus necator culture upregulates pathways, including PHB biosynthesis, CO2 fixation, carbon metabolism, pyruvate metabolism, and energy metabolism compared to pairing with ammonium nitrate. There was ∼90 % PHB content in the biomass. Overall, the study provides crucial insights into establishing a bioprocess for food waste repurposing.

The Yearlong Effect of COVID-19 on Food Safety: Consumer Practices and Perceptions Using Longitudinal Consumer Surveys and Focus Groups.

Project description:Coronavirus disease 2019 (COVID-19) caused many consumers in the United States to change their perceptions and food handling practices at the height of the pandemic. We used a quantitative-qualitative mixed-method approach to assess consumers' risk perceptions and food safety practices during the COVID-19 pandemic. Nine waves of surveys were distributed to an online consumer panel over a 13-month period (April 2020-May 2021), and four waves of focus groups were conducted (May-July 2020 and June 2021). While the pandemic elevated peoples' perceptions of risks related to food safety practices, many consumers were reverting to past behaviors by May 2021. Participants asserted high confidence in their food safety measures; however, they perceived a low risk of contracting COVID-19 from food. Contrasts in food handling became apparent when assessing different age groups; observations revealed that practices in households with high-risk individuals differed significantly from those without. Although not recommended, the practice of washing produce with soap was consistent, predicting a possible continuation of this practice over time. This study highlights various factors that food safety educators and policymakers need to consider for effective communication about risks associated with food safety practices in preparation for pandemics and other major health events.

Food choice, activity level, and carbon footprint: exploring potential for sustainable food consumption practices in young adults.

Project description:This study aims to explore climate consciousness in relation to food consumption in young adults, examining its relationship with physical activity level and gender. A mixed-method approach is utilized, integrating seven-day food records and semi-structured interviews, employing social practice theory in our analytical framework. Our cohort of 47 participants (25 women, 22 men) displays varied diets, from omnivores to vegans. Moderately-active women show the lowest carbon footprint, favoring climate-conscious choices related to lower energy needs and plant-based preferences. Highly-active individuals consume more energy, resulting in a higher carbon footprint. Gender differences are evident, women were inclined to climate-conscious food practices motivated by animal ethics and health concerns. Conversely, men demonstrated a tendency for meat consumption. Participants share an understanding of carbon footprint, reflecting a solid awareness of food-related climate impact but differ in priorities; performance for highly-active, and economy for moderately-active. This highlights a mix of commonalities and distinctions, informing flexible, sustainable food practices. Higher activity levels are linked to greater energy needs and a higher carbon footprint. Moderately-active women show the most climate-conscious food choices, leading to the lowest carbon footprint. Our findings indicate that highly-active individuals and men have significant potential to improve climate-adapted food consumption.

Water-Food-Carbon Nexus Related to the Producer-Consumer Link: A Review.

Project description:Clarifying the water-food-carbon nexus is key to promoting the harmonious development of human society and environmental resources. The sustainable development of agricultural production systems is being challenged by water scarcity and climate change. Crop growth and irrigation consume large amounts of water, and greenhouse gases are generated due to processes such as fertilizer application and enteric fermentation. These environmental impacts accompany the agricultural production process and are thus embedded in the entire life cycle of diverse food items; in turn, consumers' food choices indirectly impact water consumption and greenhouse gas emissions. Reducing agricultural water consumption and greenhouse gas emissions during food production have become crucial issues in mitigating the projected water, climate, and food crises. From the consumer's perspective, diets vary regionally due to different natural conditions for food production and varying socioeconomic and income levels. This review delves into the interactions between diet and its potential environmental impacts, including water consumption and greenhouse gas emissions, in order to support further development of the water-food-carbon nexus.

Beef Quality Preferences: Factors Driving Consumer Satisfaction.

Project description:The current study was designed to broaden the understanding of the attributes impacting the sensory properties of beef when consumed. Using a survey of consumers from three different geographical regions in the United States (US), we determined the impacts of three attributes on overall satisfaction in several different ways. The two main statistical methods used were an Ordinary Least Squares (OLS) model and the Conditional Logit model. Perhaps the most important finding of this study was that flavor was the largest contributor to consumer satisfaction. This finding was consistent throughout all the models. In the base model, flavor represented 59% of the satisfaction rating. Additionally, results indicated domestic beef was preferred over Australian beef by US consumers. Another important finding of the study was the impact of the demographic variables of age, income, and gender on satisfaction. The older group generally placed more emphasis on tenderness, while younger people preferred juicier beef. Males were more responsive than females for all attributes, especially tenderness. Those with higher income were more responsive to tenderness for all quality levels, but the lower income group was more responsive to juiciness. Overall, flavor had the largest impact on consumers' satisfaction level in comparison to tenderness or juiciness.

Community diversity, structure and carbon footprint of nematode food web following reforestation on degraded Karst soil.

Project description:We examined community diversity, structure and carbon footprint of nematode food web along a chronosequence of T. Sinensis reforestation on degraded Karst. In general, after the reforestation: a serious of diversity parameters and community indices (Shannon-Weinier index (H'), structure index (SI), etc.) were elevated; biomass ratio of fungivores to bacterivores (FFC/BFC), and fungi to bacteria (F/B) were increased, and nematode channel ratio (NCR) were decreased; carbon footprints of all nematode trophic groups, and biomass of bacteria and fungi were increased. Our results indicate that the Karst aboveground vegetation restoration was accompanied with belowground nematode food web development: increasing community complexity, function and fungal dominance in decomposition pathway, and the driving forces included the bottom-up effect (resource control), connectedness of functional groups, as well as soil environments.
