Project description:Recent developments in the miniaturization of hyperspectral imaging sensors have given rise to the increased use of hyperspectral imagery as the primary data for evaluating spectral unmixing algorithms in applications such as industrial quality control, agriculture, mineral mapping, military, etc. This article presents an ultra-high-resolution hyperspectral imagery dataset for undertaking benchmark studies on spectral unmixing. A terrestrial hyperspectral imager (THI) is used for imaging the target scene with the camera sensor pointing horizontally towards the target scene. The datasets are acquired at various spatial resolutions ranging from 1 mm to 2 cm. The targeted scene contains several paper-based panels, each size of 2 cm x 2 cm and filled with different colours and proportions, glued to a black background board that maintains a distinguishable distance between one another. In addition to the hyperspectral imagery data acquisitions, reference spectral signatures of the candidate mixture materials are obtained by in-situ hyperspectral reflectance measurements using a spectroradiometer. The hyperspectral image acquisition and the in-situ spectral signatures of the target scene are collected under natural illumination conditions. The proposed datasets are designed for undertaking proof-of-the-concept (PoC) studies in spectral unmixing. The datasets are also valuable for evaluating the performance of different statistical and machine learning algorithms for target detection, classification, and sub-pixel classification algorithms.

Project description:Grapes and berries are two types of widely consumed fruits characterized by a high content in different phytochemicals. However, their accurate dietary assessment is particularly arduous, because of the already wide recognized bias associated with self-reporting methods, combined with the large range of species and cultivars and the fact that these fruits are popularly consumed not only in fresh and frozen forms but also as processed and derived products, including dried and canned fruits, beverages, jams, and jellies. Reporting precise type and/or quantity of grape and berries in FFQ or diaries can obviously be affected by errors. Recently, biomarkers of food intake (BFIs) rose as a promising tool to provide accurate information indicating consumption of certain food items. Protocols for performing systematic reviews in this field, as well as for assessing the validity of candidate BFIs have been developed within the Food Biomarker Alliance (FoodBAll) Project. This paper aims to evaluate the putative BIFs for blueberries, strawberries, raspberries, blackberries, cranberries, blackcurrant, and grapes. Candidate BFIs for grapes were resveratrol metabolites and tartaric acid. The metabolites considered as putative BFI for berries consumption were mostly anthocyanins derivatives together with several metabolites of ellagitannins and some aroma compounds. However, identification of BFIs for single berry types encountered more difficulties. In the absence of highly specific metabolites reported to date, we suggested some multi-metabolite panels that may be further investigated as putative biomarkers for some berry fruits.

Project description:A minimally invasive needle refractometer is presented for sugar content measurements within produce. A passive sampling cap structure was developed that improves the reliability of the device by avoiding interfering back reflections from the flesh of the produce. It is explained that factory calibration may not be needed for this type of refractometer, potentially reducing production costs. Also demonstrated is an iterative method to correct for temperature variations without the need for an integrated model for how the refractive index changes with temperature for different levels of sugar concentration. The sensor showed a typical standard deviation of 0.4 °Bx for a 10-s-long measurement and was validated against a prism refractometer, showing an average offset of (0.0±0.1) °Bx. In addition, the potential for using the device to investigate sugar distributions within a single fruit sample is demonstrated.

Project description:Xinjiang is the largest grape-producing region in China and the main grape cultivation area in the world. The Eurasian grape resources grown in Xinjiang are very rich in diversity. The sugar composition and content are the main factors that determine the quality of berries. However, there are currently no systematic reports on the types and contents of sugars in grapes grown in Xinjiang region. In this research, we evaluated the appearance and fruit maturity indicators of 18 grape varieties during fruit ripening and determined their sugar content using GC-MS. All cultivars primarily contained glucose, D-fructose, and sucrose. The glucose content in varieties varied from 42.13% to 46.80% of the total sugar, whereas the fructose and sucrose contents varied from 42.68% to 50.95% and 6.17% to 12.69%, respectively. The content of trace sugar identified in grape varieties varied from 0.6 to 2.3 mg/g. The comprehensive assessment by principal component analysis revealed strong positive correlations between some sugar components. A comprehensive study on the content and types of sugar will provide the foundation to determine the quality of grape cultivars and effective ways to utilize resources to improve sugar content through breeding.

Project description:Maturity degree and quality evaluation are important for strawberry harvest, trade, and consumption. Deep learning has been an efficient artificial intelligence tool for food and agro-products. Hyperspectral imaging coupled with deep learning was applied to determine the maturity degree and soluble solids content (SSC) of strawberries with four maturity degrees. Hyperspectral image of each strawberry was obtained and preprocessed, and the spectra were extracted from the images. One-dimension residual neural network (1D ResNet) and three-dimension (3D) ResNet were built using 1D spectra and 3D hyperspectral image as inputs for maturity degree evaluation. Good performances were obtained for maturity identification, with the classification accuracy over 84% for both 1D ResNet and 3D ResNet. The corresponding saliency maps showed that the pigments related wavelengths and image regions contributed more to the maturity identification. For SSC determination, 1D ResNet model was also built, with the determination of coefficient (R 2) over 0.55 of the training, validation, and testing sets. The saliency maps of 1D ResNet for the SSC determination were also explored. The overall results showed that deep learning could be used to identify strawberry maturity degree and determine SSC. More efforts were needed to explore the use of 3D deep learning methods for the SSC determination. The close results of 1D ResNet and 3D ResNet for classification indicated that more samples might be used to improve the performances of 3D ResNet. The results in this study would help to develop 1D and 3D deep learning models for fruit quality inspection and other researches using hyperspectral imaging, providing efficient analysis approaches of fruit quality inspection using hyperspectral imaging.

Project description:Red ginseng (RG) has been traditionally valued in Northeast Asia for its health-enhancing properties. Recent advancements in hyperspectral imaging (HSI) offer a non-destructive, efficient, and reliable method to assess critical quality indicators of RG, such as reducing sugar content (RSC), water content (WC), and hollow rate (HR). This study developed predictive models using HSI technology to monitor these quality indicators over the spectral range of 400-1700 nm. Image features were enhanced using Principal Component Analysis (PCA) and Minimum Noise Fraction (MNF), followed by classification through Spectral Angle Mapping (SAM). The best-performing model for RSC achieved an R2 value of 0.6198 and a root mean square error (RMSE) of 0.013. For WC, the optimal model obtained an R2 value of 0.6555 and an RMSE of 0.014. The spatial distribution of RSC, WC, and HR was effectively visualized, demonstrating the potential of HSI for on-site quality control of RG. This study provides a foundation for real-time, non-invasive monitoring of RG quality, addressing industry needs for rapid and reliable assessment methods.

Project description:Sugar accumulation is a critical event during grape berry ripening that determines the grape market values. Berry cells are highly dependent on sugar transporters to mediate cross-membrane transport. However, the role of sugar transporters in improving sugar accumulation in berries is not well established in grapes. Herein we report that a Sugars Will Eventually be Exported Transporter (SWEET), that is, VvSWEET10, was strongly expressed at the onset of ripening (véraison) and can improve grape sugar content. VvSWEET10 encodes a plasma membrane-localized transporter, and the heterologous expression of VvSWEET10 indicates that VvSWEET10 is a hexose-affinity transporter and has a broad spectrum of sugar transport functions. VvSWEET10 overexpression in grapevine calli and tomatoes increased the glucose, fructose, and total sugar levels significantly. The RNA sequencing results of grapevine transgenic calli showed that many sugar transporter genes and invertase genes were upregulated and suggest that VvSWEET10 may mediate sugar accumulation. These findings elucidated the role of VvSWEET10 in sugar accumulation and will be beneficial for the improvement of grape berry quality in the future.

Project description:To characterize the nutrients and bioactive compounds in grape berries and to explore the real cause of the "French paradox" phenomenon, we performed metabolomic analysis of 66 grape varieties worldwide using liquid chromatography-tandem mass spectrometry (LC-MS). A nontargeted metabolomics approach detected a total of 4889 metabolite signals. From these, 964 bioactive and nutrient compounds were identified and quantified, including modified flavonoids, medicinal pentacyclic triterpenoids, vitamins, amino acids, lipids, etc. Interestingly, metabolic variations between varieties are not explained by geography or subspecies but can be significantly distinguished by grapes' color, even after excluding flavonoids and anthocyanins. In our analysis, we found that purple grape varieties had the highest levels of key bioactive components such as flavonoids, pentacyclic triterpenes, and polyphenols, which are thought to have a variety of health benefits such as antioxidant, anti-inflammatory, and antitumor properties, when compared to grapes of other colors. In addition, we found higher levels of vitamins in red and pink grapes, possibly explaining their role in preventing anemia and scurvy and protecting the skin. These findings may be a major factor in the greater health benefits of wines made from purple grapes. Our study provides comprehensive metabolic profiling data of grape berries that may contribute to future research on the French paradox.

Project description:A healthy diet should nourish the brain with essential nutrients, including bioactive compounds, for normal brain functioning and to protect it from the negative effects of inflammation and oxidative stress. In this review, a concise summation of the protective effects of selected fruits, namely, berries, grapes, and citrus fruits, against neurological disorder is presented. The focus is on the neuroprotective potential of these fruits against neurodegenerative and mental disorders. The fruits selection was based on the vast reported pharmacological studies on their neuroprotection efficacies. Hence, the respective knowledge and limitations are discussed based on the biological and pharmacological evidence compiled from the previously reported laboratory, epidemiology, and intervention trials.

Project description:Suspensions of hemoglobin microparticles (HbMPs) are promising tools as oxygen therapeutics. For the approval of clinical studies extensive characterization of these HbMPs with a size of about 750 nm is required regarding physical properties, function, pharmaco-kinetics and toxicology. The standard absorbance measurements in blood gas analyzers require dissolution of red blood cells which does not work for HbMP. Therefore, we have developed a robust and rapid optical method for the quality and functionality control of HbMPs. It allows simultaneous determination of the portion of the two states of hemoglobin oxygenated hemoglobin (oxyHb) and deoxygenated hemoglobin (deoxyHb) as well as the content of methemoglobin (metHb). Based on the measurement of collimated transmission spectra between 300 nm and 800 nm, the average extinction cross section of HbMPs is derived. A numerical method is applied to determine the composition of the HbMPs based on their wavelength-dependent refractive index (RI), which is a superposition of the three different states of Hb. Thus, light-scattering properties, including extinction cross sections can be simulated for different compositions and sizes. By comparison to measured spectra, the relative concentrations of oxyHb, deoxyHb, metHb are accessible. For validation of the optically determined composition of the HbMPs, we used X-ray fluorescence spectrometry for the ratio of Fe(II) (oxyHb/deoxyHb) and Fe(III) (metHb). High accuracy density measurements served to access heme-free proteins, size was determined by dynamic light scattering and analytical centrifugation and the shape of the HbMPs was visualized by electron and atomic force microscopy.
