The presence of microplastics (MPs) in processed seafood is a growing concern. Project description:Several studies have shown that canned meat products may be contaminated with fungal elements, bacteria and even heavy metals which may occur during the transportation, storage and handling processes. We conducted this study to determine the fungal, microbial and heavy metal contents of canned meats in Saudi Arabia. Of the 13 canned meat samples studied, Aspergillus and Penicillium were found in more than 70% of the total samples. Sequences of Penicillium species isolated from meat samples generated a phylogenetic tree which shows that the studied isolates were clustered in four groups. No bacterial contamination was noted in all of the samples. Nine of the 13 samples had iron concentrations above the permissible limit. All samples had zinc and copper levels below the maximum permissible limit. Four samples had cadmium levels above the maximum permissible level. All samples had levels of lead above the maximum permissible levels. These results indicate that fungal elements and higher levels of heavy metals such as lead and cadmium can be found in canned meat products. This may pose as a real danger to consumers, since canned meat products are readily accessible and convenient in Saudi Arabia.

Project description:The safety of food is a matter of global concern today. Continuous monitoring of canned tuna and canned sardines quality is essential regarding metal, nonmetal, and metalloid content. In this article, we present the data on the elemental content obtained in canned tuna and canned sardines by using inductively coupled plasma optical spectrometry (ICP OES), as well as the data on Pollution Index (PI) and Health Risk Index (HRI). Pollution index and health risk index are tools used to assess elemental contamination in the environment and food. A total of 6 metals (Al, Ba, Ca, Cu, Fe, and Zn), one nonmetal (Se), and one metalloid (As) were quantified in the samples of the canned tuna and canned sardines. For elements as Al, Cu, Fe, and Se, PI > 1. In addition, Cd, Co, Cr, Ni, Zn, and Pb have PI values less than 1. The HRI values for some canned tuna samples were above 1 for elements such as Al, Ba, Ca, and As. For canned sardines, the elements Cr, Ni, and As showed HRI values >1.

Project description:Mercury is a toxic trace metal found in seafood products owing to its bioaccumulative and ubiquitous nature. Seafood and fish are frequently consumed, being necessary to assess its human health risk. Accordingly, this study quantified total mercury in samples of canned tuna in water from supermarkets in the Metropolitan District of Quito in Ecuador, in order to ensure that Hg content is within the maximum limits stablished in national and international regulations. Total mercury levels were measured through cold vapor atomic fluorescence spectrophotometry. Three of the most consumed tuna brands in Ecuador were analyzed, coded as A, B, and C, according to the price at which they are sold in the market (A < B < C). Results indicated that mean total mercury in different tuna brands were within the permissible limits. Total mercury concentrations were 0.14 ± 0.11 mg kg-1; 0.41 ± 0.42 mg kg-1; and 0.25 ± 0.22 mg kg-1 for brands A, B, and C, respectively. However, for brand B the potential non-carcinogenic risk of mercury for consumers exceeded the threshold limit (> 1). When considering the highest total mercury content to which Ecuadorian population is exposed through the consumption of brand A, B, and C, the recommended weekly intake for children and adults were: A: 63 g and 306 g; B: 12 g and 57 g; C: 30 g and 144 g, respectively.

Project description:The presence of microplastics (MPs) in the world's longest river, the Nile River, has yet to be reported. This small-scale study aimed to provide the first information about MPs in the Nile River by sampling the digestive tracts of two fish species, the Nile tilapia (Oreochromis niloticus, n = 29) and catfish (Bagrus bayad, n = 14). Fish were purchased from local sellers in Cairo, and then their gastrointestinal tracts were dissected and examined for MPs. Over 75% of the fish sampled contained MPs in their digestive tract (MP prevalence of 75.9% and 78.6% for Nile tilapia and catfish, respectively). The most abundant MP type was fibers (65%), the next most abundant type was films (26.5%), and the remaining MPs were fragments. Polyethylene (PE), polyethylene terephthalate (PET) and polypropylene (PP) were all non-destructively identified by attenuated total reflectance Fourier transform infrared spectroscopy. A comparison with similar studies from marine and freshwater environments shows that this high level of MP ingestion is rarely found and that fish sampled from the Nile River in Cairo are potentially among the most in danger of consuming MPs worldwide. Further research needs to be conducted, but, in order to mitigate microplastic pollution in the Nile River, we must act now.

Project description:BackgroundMajor fish allergens, including parvalbumin (PV), are heat stable and can withstand extensive cooking processes. Thus, the management of fish allergy generally relies on complete avoidance. Fish-allergic patients may be advised to consume canned fish, as some fish-allergic individuals have reported tolerance to canned fish. However, the safety of consuming canned fish has not been evaluated with comprehensive immunological and molecular analysis of canned fish products.MethodsWe characterized the in vitro immunoreactivity of serum obtained from fish-allergic subjects to canned fish. Seventeen canned fish products (salmon n = 8; tuna n = 7; sardine n = 2) were assessed for the content and integrity of PV using allergen-specific antibodies. Subsequently, the sIgE binding of five selected products was evaluated for individual fish-allergic patients (n = 53). Finally, sIgE-binding proteins were identified by mass spectrometry.ResultsThe canned fish showed a markedly reduced PV content and binding to PV-specific antibodies compared with conventionally cooked fish. However, PV and other heat-stable fish allergens, including tropomyosin and collagen, still maintained their sIgE-binding capacity. Of 53 patients, 66% showed sIgE binding to canned fish proteins. The canned sardine contained proteins bound to sIgE from 51% of patients, followed by canned salmon (43%-45%) and tuna (8%-17%). PV was the major allergen in canned salmon and sardine. Tropomyosin and/or collagen also showed sIgE binding.ConclusionWe showed that canned fish products may not be safe for all fish-allergic patients. Canned fish products should only be considered into the diet of individuals with fish allergy, after detailed evaluation which may include in vitro diagnostics to various heat-stable fish allergens and food challenge conducted in suitable environments.

Project description:In this study, total mercury content was determined in 84 canned fish corresponding to commonly consumed brands (over 14 different producers), which were purchased from local markets in Poland in the years 2019-2020. For comparison purposes, samples of both the matrix in which the fish were kept along with the seafood samples were measured. The analyses were carried out using the cold vapor AAS technique. Statistical analyses were employed to identify significant differences in mercury content in relation to the selected criteria such as fish species, type of fish (predatory, non-predatory) and the producer brand. The obtained results were compared against domestic and international standards as well as with the literature data in order to evaluate the safety of the canned fish consumption. The study revealed that none of canned fish exceeded the acceptable levels set by the FAO/WHO. The highest amount of Hg was recorded for canned tuna (maximum 351.30 µg/kg, mean 74.38 µg/kg). Further, the estimated tolerable dose of weekly mercury intake suggests that the consumption of over 1.8 cans of fish with the highest mean mercury content should not pose a risk to consumers in Poland according to international standards. Among the ten highest mean results for mercury, five of them belonged to canned tuna (Bonito species) kept in different matrices. These consisted of seven domestic and three imported brands of fish products, which is a worrying message for a local community. Mercury content in predatory fish differed significantly from the results gathered for non-predatory fish and the total amount of mercury in studied canned fish corresponded to their status in the aquatic food chain. Moreover, significant differences were stated between various fish species and fishing areas. Fish caught in the Atlantic Ocean (cod and herring) presented higher mercury content than the ones from closed seas.

Project description:BackgroundMicroplastics (MPs) are omnipresent in the environment, including the human food chain; a likely important contributor to human exposure is drinking water.ObjectiveTo undertake a systematic review of MP contamination of drinking water and estimate quantitative exposures.MethodsThe protocol for the systematic review employed has been published in PROSPERO (PROSPERO 2019, Registration number: CRD42019145290). MEDLINE, EMBASE and Web of Science were searched from launch to the 3rd of June 2020, selecting studies that used procedural blank samples and a validated method for particle composition analysis. Studies were reviewed within a narrative analysis. A bespoke risk of bias (RoB) assessment tool was used.Results12 studies were included in the review: six of tap water (TW) and six of bottled water (BW). Meta-analysis was not appropriate due to high statistical heterogeneity (I2>95%). Seven studies were rated low RoB and all confirmed MP contamination of drinking water. The most common polymers identified in samples were polyethylene terephthalate (PET) and polypropylene (PP), Methodological variability was observed throughout the experimental protocols. For example, the minimum size of particles extracted and analysed, which varied from 1 to 100 μm, was seen to be critical in the data reported. The maximum reported MP contamination was 628 MPs/L for TW and 4889 MPs/L for BW, detected in European samples. Based on typical consumption data, this may be extrapolated to a maximum yearly human adult uptake of 458,000 MPs for TW and 3,569,000 MPs for BW.ConclusionsThis is the first systematic review that appraises the quality of existing evidence on MP contamination of drinking water and estimates human exposures. The precautionary principle should be adopted to address concerns on possible human health effects from consumption of MPs. Future research should aim to standardise experimental protocols to aid comparison and elevate quality.

Project description:IntroductionHeat treatment is indispensable in fish canning to provide an acceptable shelf life. Its optimisation reduces the risk of the presence of Clostridium botulinum spores, which could potentially cause botulism cases. This study evaluated canned fish samples for botulism neurotoxin (BoNT)-producing clostridia contamination and can bulging through microbiological contaminant growth. A new analytical approach was developed for detection of such clostridia and phenotypically similar species.Material and methodsA total of 70 canned fish samples suspected of exhibiting bulging features were analysed. Culture methods were used to detect clostridia. The isolates obtained were evaluated on the basis of the exhibited phenotypic characteristics. Also, PCRs were used for the detection of genes determining BoNT production (non-toxic non-haemagglutinin (ntnh) genes) and the amplification of conservative 16S rDNA genes, which were Sanger sequenced. The obtained sequences were analysed using the Basic Local Alignment Search Tool.ResultsClostridium genus species were isolated from 17 (24%) bulging and organoleptically changed samples. No ntnh genes were present in these isolates; however, sequencing confirmed the presence of C. sporogenes, a species with close affinity to C. botulinum.ConclusionTo eliminate the threat of foodborne botulism, laboratory diagnostic techniques must detect species of the Clostridium genus and elucidate their ability to produce BoNTs. Although Clostridium botulinum is the most common cause of botulism, the possibility may not be ignored that non-pathogenic Clostridium species may acquire botulinum toxigenicity. The similarity between the isolated strains of C. sporogenes and C. botulinum should be incorporated in the optimisation of heat treatment to guarantee a sterilised, microbiologically safe product.

Project description:Plastic pollution is a rapidly worsening environmental problem, especially in oceanic habitats. Environmental pollution with microplastic particles is also causing food consumed by humans to be increasingly polluted, including table salts. Therefore, we present the first study which focuses only on table salt products purchased in Taiwan which we examined for the presence of microplastics. We used Fourier transform infrared spectroscopy to identify the polymer type of each particle. Within 4.4 kg of salt, we detected 43 microplastic particles which averages to 9.77 microplastic particles/kg. The identified polymer types were, in descending abundance, polypropylene, polyethylene, polystyrene, polyester, polyetherimide, polyethylene terephthalate, and polyoxymethylene. We combined our novel results with those of previous studies to provide the first global review of microplastic contamination of table salts. We found that 94% of salt products tested worldwide contained microplastics, with 3 out of 27 polymer types (polyethylene terephthalate, polypropylene, polyethylene) accounting for the majority of all particles. Averaging over seven separate studies, table salts contain a mean of 140.2 microplastic particles/kg. With a mean annual salt consumption of ~3.75 kg/year, humans therefore annually ingest several hundred microplastic particles from salt alone.

Project description:Microplastics (MP) have been reported in Southern Ocean (SO), where they are likely to encounter Antarctic zooplankton and enter pelagic food webs. Here we assess the presence of MP within Antarctic krill (Euphausia superba) and salps (Salpa thompsoni) and quantify their abundance and type by micro-Fourier transform infrared microscopy. MP were found in both species, with fibres being more abundant than fragments (krill: 56.25% and salps: 22.32% of the total MP). Polymer identification indicated MP originated from both local and distant sources. Our findings prove how in situ MP ingestion from these organisms is a real and ongoing process in the SO. MP amount was higher in krill (2.13 ± 0.26 MP ind-1) than salps (1.38 ± 0.42 MP ind-1), while MP size extracted from krill (130 ± 30 µm) was significantly lower than MP size from salps (330 ± 50 µm). We suggest that differences between abundance and size of MP ingested by these two species may be related to their food strategies, their ability to fragment MP as well as different human pressures within the collection areas of the study region. First comparative field-based evidence of MP in both krill and salps, two emblematic zooplankton species of the SO marine ecosystems, underlines that Antarctic marine ecosystems may be particularly sensitive to plastic pollution.
