Effect of astaxanthin on carp quality and its metabolic pathway in vivo


ABSTRACT: This study evaluated the effects of astaxanthin on the traits of common carp (Cyprinus carpio L.) and identified the causes of flesh color changes. The conversion of astaxanthin by the liver was assessed based on in vitro experiments. Using liver proteomics, computer-aided protein homology modeling and reverse molecular docking techniques, the possible metabolic pathways of astaxanthin in common carp were analyzed.
