ABSTRACT: Pork is the most widely consumed meat globally and serves as a primary source of high-quality protein for humans. Proteomics plays a crucial role in uncovering information relevant to specific biological reactions. It is an indispensable technique for identifying proteins that regulate metabolic pathways associated with meat quality. Our research conducted proteomic analysis on the psoas major muscle (PMM), longissimus dorsi muscle (LDM), and semimembranosus (SM). of Saba pigs for the variations in meat quality among the three muscles.
