Proteomics-Based Research on NnAP2 Regulation of Starch Content
Ontology highlight
ABSTRACT: The lotus is the most widely cultivated aquatic vegetable in China. Its underground stem (lotus root) is the primary edible part. Soluble sugars and starch are key quality indicators determining the texture and processing flavor of lotus root. Investigating the mechanism by which NnAP2 regulates starch content through proteomics not only deepens our understanding of the molecular regulation of starch accumulation in lotus root but also provides a theoretical basis for improving its texture and quality. This holds significant importance for enhancing the economic benefits of lotus root in agricultural production.
