Effect of vitamin A restriction in the bovine diet

ABSTRACT: The importance of increasing the intramuscular fat content of meat to meet the quality standard and add value to the product, there is the possibility of using the restriction of vitamin A in the diet as a tool to modulate the deposition of fat in the animal carcass. However, the mechanisms involved in the positive interaction between restriction of vitamin A in the diet and the degree of marbling in beef are not yet understood. In this context, the objective is to study genes, proteins and lipids associated with the mechanisms of intramuscular fat deposition in the carcass to understand their metabolic pathways and interrelationships from integrated proteomics, transcriptome and lipidomics data.
