Season-dependent variation in glucosinolate and S-methyl-L-cysteine sulfoxide and hydrolysis in Brassica oleracea

ABSTRACT: Brassica vegetables are rich in phytochemicals, such as glucosinolates (GLSs) and S methyl L cysteine sulfoxide (SMCSO), which are sulfur-containing secondary metabolites. To optimize the quality of B. oleracea vegetables towards increased potential to release specific hydrolysis products from GLSs and SMCSO levels, these compounds were monitored over the harvest seasons of different B. oleracea cultivars in three consecutive years under field conditions. Proteome analysis was performed to correlate the formation of specific metabolites with underlying proteins involved in their formation.
