Glycosylation-mediated detoxification of zearalenone by the Tibetan yeast Hannaella zeae: Multi-omics insights into its dual-function mechanism


ABSTRACT:

This study investigated the detoxification of zearalenone (ZEN) by the Tibetan Plateau yeast Hannaella zeae via untargeted LC-MS/MS-based metabolomics. H. zeae was cultured in NYDB medium with ZEN supplementation, and samples were harvested after 36 h of incubation for metabolomic analysis. The control group was incubated under identical conditions with the same yeast inoculation, except that no ZEN was added to the medium. Metabolomic profiling was conducted in both positive and negative ion modes to characterize metabolic changes linked to ZEN biotransformation and yeast-mediated detoxification. The study focused on the glycosylation of ZEN and the formation of the low-toxicity metabolites ZEN-14-G and ZEN-16-G.
