Day 0 Baseline Metabolomic Profiling during Mixed-Culture Fermentation of Dendrobium officinale Flowers
Ontology highlight
ABSTRACT: This study provides the Day 0 baseline metabolomic dataset for a 60-day mixed-culture liquid fermentation of Dendrobium officinale flowers. Six biological samples were collected from six independent fermentation vessels immediately after inoculation and homogenization, before fermentation incubation began. Untargeted LC–MS/MS analysis was performed in positive and negative electrospray ionization modes using a UHPLC system coupled to a Thermo Scientific Orbitrap Exploris 240 mass spectrometer. The deposited dataset comprises raw mass spectrometry data from six biological samples and four pooled quality-control measurements per ionization mode, totaling 20 RAW files. This dataset supplements the previously published MetaboLights study MTBLS15132, which contains samples collected on fermentation days 10, 20, 30, 40, 50, and 60. The Day 0 samples were analyzed in a separate analytical batch. Together, the two datasets provide coverage of the Day 0–60 fermentation time series and support the investigation of fermentation-associated metabolomic changes.
