Anisakis simplex L3 proteome stability under heat sterilization condition


ABSTRACT: Protein extracts from Anisakis simplex L3 larvae were autoclaved at 121C for 60 min. Subsequently, prepared samples were analyzed in LC-MS/MS to identify autoclave-resistant proteins (also allergens).

<i>Anisakis simplex</i> third-stage larvae are the main source of hidden allergens in marine fish products. Some <i>Anisakis</i> allergens are thermostable and, even highly processed, could cause hypersensitivity reactions.
