Peptide profiling of pasteurized milk during storage

ABSTRACT: We investigated the changes in the peptide profile of pasteurized milk during its shelf life to identify storage-dependent markers. Accordingly, two independent storage experiments were performed and their peptide profiles were recorded with microLC–timsTOF Pro-MS/MS.
