Project description:This project presents LC-MS/MS-based proteomic datasets obtained from bacterial colonies isolated from retail chicken meat samples, as part of a study focused on the detection of Campylobacter jejuni. The isolates were initially screened using a novel chromogenic enzymatic assay targeting hippuricase activity, which is specific for C. jejuni. Selected samples, including both enzymatically positive and negative results, were subjected to in-gel digestion followed by high-resolution LC-MS/MS analysis on an Orbitrap Exploris 240 instrument.

Proteomic Profiling of Conventional and Cultured Chicken Meat

Project description:This project aimed to compare the proteomic profiles between conventional chicken meat and cultured chicken meat produced through cell culture techniques. Proteins were extracted, separated using SDS-PAGE and two-dimensional gel electrophoresis (2-DE), and identified through mass spectrometry. KEGG pathway enrichment and STRING-based protein-protein interaction network analyses were performed to evaluate metabolic characteristics and structural differences between the groups. Conventional meat exhibited a high abundance of glycolytic and muscle contraction-associated proteins, while cultured meat showed elevated expression of proteins involved in stress response and redox regulation. These datasets provide fundamental insights for improving the quality and ensuring the safety of cultured meat products.

Transcriptomic changes of Campylobacter jejuni subsp. jejuni strain 81116 in water

Project description:Campylobacter jejuni is the leading cause of campylobacteriosis in the developed world. Although most cases are caused by consumption of contaminated meat, a significant proportion is caused by consumption of contaminated water. Some C. jejuni isolates are better than others at surviving in water, which suggests that these strains are better adapted to transmission by water than others. The aim of this study is to investigate this phenomenon further. CFU counts and viability assays showed that strain 81116 survives better than strain 81-176 in a defined freshwater medium at 4°C. Comparative transcriptomic profiling using microarray revealed that these strains respond differently to water. This series presents the transcriptome of strain 81116 in water.

Chicken meat quality: muscle transcriptional profiles of chickens with high and low breast meat ultimate pH

Project description:The processing ability of chicken meat is highly related to its ultimate pH (pHu), which is mainly determined by the amount of glycogen in the muscle at death. The molecular mechanisms involved in variations of those traits for chicken remain to be fully described. For that purpose, two chicken lines were divergently selected on breast meat pHu, i.e. the pHu- and the pHu+ lines. In this study, Chicken Genome Arrays (60 K) were used to compare muscle gene expression profiles of chickens from both lines. The final goal of this experiment is to identify biomarkers of low and high-pHu chicken meat. This study was supported by INRA and the French Ministry of Agriculture through the RFI CASDAR #1309 OPTIVIANDE.

RNAseq analysis of Campylobacter jejuni treated with hypochlorite

Project description:Campylobacter jejuni is a human pathogen which causes campylobacteriosis, one of the most widespread zoonotic enteric diseases worldwide. Most cases of sporadic C. jejuni infection occur through the handling or consumption of undercooked chicken meat, or cross-contamination of other foods with raw poultry fluid. A common practice to combat Campylobacter infection is to treat chickens with chlorine which kills the microbe. This analysis aimed to elucidate the transcriptomic response of Campylobacter jejuni treated with hypochlorite through Illumina sequencing. C. jejuni was grown and treated with hypochlorite. Samples were taken 5, 20 and 45 min after treatment for RNAseq analysis.The data generated were compared to the transcriptome pre-exposure to determine C. jejuni's response to hypochlorite.

MicroRNA expression in chicken cecum following Campylobacter jejuni infection
