Gut-Muscle Axis Regulates Meat Quality in Lambs: Rumen Microbiota-Differentiated L-Arginine and Serotonin Signaling Mediates Muscle Lipid Remodeling


ABSTRACT:

This study investigated age-associated changes in the gut-muscle axis and their potential contribution to meat quality in Tan sheep (Ovis aries). Twelve Tan sheep were divided into two age groups, including six 3-month-old animals (T3) and six 6-month-old animals (T6). Untargeted LC-MS metabolomics was performed to characterize serum metabolic profiles, and untargeted lipidomics was used to investigate lipid remodeling in longissimus dorsi muscle. In parallel, rumen microbial community profiles were analyzed to explore potential associations between microbiota-derived metabolites, host metabolism, and muscle lipid composition. Particular attention was paid to L-arginine- and serotonin-related metabolic signaling and their associations with muscle lipid remodeling and meat quality. The dataset provides mass spectrometry-based metabolomic and lipidomic profiles for investigating age-related metabolic regulation and gut-muscle interactions in Tan sheep.
